Wir werden in<strong>mehreren Artikeln<\/strong> \u00fcber ligurische Pasta sprechen, denn es gibt so viele Formate und sie sind alle sehr gut.<\/p>\n<h3>Ligurische Pasta: Tagliolino und Fidelino<\/h3>\n<p><strong><br \/>\nBeginnen wir mit Tagliolino, dem wahrscheinlich<\/strong> <strong>l\u00e4ngsten und beliebtesten<\/strong>ligurischen Pastaformat <strong>der Genueser.<\/strong>Tagliolini sind sehr lange, zu einem Strang gewickelte Streifen wei\u00dfer Pasta. <strong><\/strong><br \/>\nTraditionell <strong>werden sie mit &#8218;tocco&#8216;,<\/strong> <em>tuccu<\/em> in Genovese, der ligurischen Fleischsauce, oder mit dem k\u00f6stlichen und duftenden <strong>Pesto Genovese<\/strong> <strong>angemacht<\/strong>.<br \/>\nDie <strong>superd\u00fcnne Version der<\/strong> Tagliolini hei\u00dft <strong>Fidelino<\/strong> und wird oft in Br\u00fche gegessen.<br \/>\nEinem alten Rezept zufolge sind Fidelini k\u00f6stlich, wenn sie in Br\u00fche mit Wei\u00dffisch gekocht werden.<\/p>\n<h3>Ligurische Pasta: die Trenetta<\/h3>\n<p>Die Pasta, die <strong>in Ligurien<\/strong> traditionell <strong>zum Pesto Genovese gereicht wird, ist die Trenetta<\/strong>, eine Art lange, abgeflachte Spaghetti mit rechteckigem Querschnitt und mittlerer Dicke.<br \/>\nWissen Sie, warum sie Trenette genannt werden? Weil <strong> <em>&#8222;trenna&#8220;<\/em> im Dialekt &#8222;Schnur <em>&#8222;<\/em> bedeutet<\/strong>, und in der Tat erinnert es daran.
