Entdecken Sie sie in unseren News!<\/h2>\n<p>Heute, liebe Freunde von Pesto Fresco, sprechen wir mit Ihnen \u00fcber ein besonderes ligurisches Produkt mit einem geheimnisvollen &#8218;\u00e4gyptischen&#8216; Namen: die <strong>\u00e4gyptische Zwiebel<\/strong>.<br \/>\nEs ist ein durch die <strong>Arche<\/strong> <strong>des Geschmacks<\/strong> gesch\u00fctztes Produkt, das zu den  <strong>Slow Food Stiftung f\u00fcr biologische Vielfalt Onlus.<\/strong><\/p>\n<p>Die \u00c4gyptische Zwiebel, auch <strong>Baumzwiebel oder Wanderzwiebel<\/strong> genannt, ist ein <strong>seltenes und altes Gem\u00fcse<\/strong>, das vor allem in <strong>Ligurien<\/strong> angebaut wird. Ihr Anbau ist auf die<strong>Gebiete von Ventimiglia und das Nervia-Tal<\/strong> beschr\u00e4nkt, wo einige Vereine den Anbau und den Austausch von Zwiebeln gef\u00f6rdert haben.<\/p>\n<p>Ihre genaue Herkunft ist nicht bekannt: <strong>Der Name &#8218;\u00e4gyptisch&#8216; ist sehr geheimnisvoll<\/strong>. Die alten \u00c4gypter verehrten Zwiebeln und glaubten, dass die Kugelform und die konzentrischen Ringe ewiges Leben symbolisieren. Sie waren sogar in den Gr\u00e4bern der Pharaonen zu finden. Es ist jedoch nicht sicher, ob diese Sorte tats\u00e4chlich aus der \u00e4gyptischen Zivilisation stammt.  <\/p>\n<p>Insbesondere die \u00e4gyptische Zwiebel <strong>passt sich sehr gut an das ligurische Klima an<\/strong>: in den Boden gepflanzt, ist sie in der Lage, jedes Jahr und \u00fcber Jahre hinweg zahlreiche Zwiebeln in der Luft zu produzieren, was die Produktion erheblich steigert. Sie zeichnet sich dadurch aus, dass sie anstelle der traditionellen Bl\u00fcte eine Krone aus kleinen Zwiebeln ausbildet, und ist<strong>einfach zu kultivieren<\/strong>: indem man die von der Mutterpflanze geernteten Zwiebeln im Fr\u00fchjahr vergr\u00e4bt, w\u00e4chst die Pflanze ohne allzu viel Aufmerksamkeit und ist gut widerstandsf\u00e4hig gegen Krankheiten. Die Aussaat kann auch im Herbst erfolgen: sie \u00fcbersteht den Winter ohne Schwierigkeiten. Wenn sie nicht geerntet wird, w\u00e4chst sie von selbst wieder an. Die Spitze der Pflanze, die bis zu 1,2 Meter hoch werden kann (daher der Name Zwiebelbaum), biegt sich langsam unter dem Gewicht ihres eigenen Kopfes, bis sie den Boden ber\u00fchrt, wo sie Wurzeln schl\u00e4gt und neue Pflanzen hervorbringt. Daher auch der Name Wanderzwiebel.   <\/p>\n<p>Die mittelgro\u00dfe bis gro\u00dfe Zwiebel mit einer eher ledrigen Schale wird wie jede andere Sorte gegessen<strong>: in Suppen, gebraten oder roh in Salaten<\/strong>, w\u00e4hrend die Zwiebelknollen wie die traditionellen Fr\u00fchlingszwiebeln verwendet werden, vor allem <strong>eingelegt<\/strong>.<\/p>\n<p>Die in der<strong>Arche des<\/strong> <strong>Geschmacks<\/strong> gesammelten traditionellen Produkte, lokalen Rassen und das Wissen geh\u00f6ren den Gemeinschaften, die sie im Laufe der Zeit bewahrt haben.
