Finden Sie es in unseren Nachrichten heraus!  <\/h2>\n<p>Liebe Freunde von Pesto Fresco, in den Nachrichten dieser Woche berichten wir \u00fcber einen sehr gesch\u00e4tzten <strong>Slow Food F\u00f6rderkreis<\/strong> <strong>Liguriens<\/strong>, der ganz in unserer N\u00e4he, nur wenige Kilometer von Loano entfernt, angebaut wird: der <strong>violette<\/strong><strong>Spargel<\/strong> <strong>von Albenga<\/strong>.<\/p>\n<p>Der violette Spargel ist einer der<strong>&#8218;Vier von Albenga<\/strong>&#8218;, zu denen auch die <strong>Cuore di Bue-Tomate<\/strong>, die <strong>Spinat-Artischocke<\/strong> und die <strong><a href=\"https:\/\/pestofresco.eu\/zucchina-trombetta-di-albenga\/\">Trombetta-Zucchini<\/a><\/strong> geh\u00f6ren.<\/p>\n<h3>Violetter Spargel von Albenga: Merkmale<\/h3>\n<p>Aufgrund seiner <strong>intensiven violetten Farbe<\/strong>, die zum Boden hin allm\u00e4hlich verblasst, und seiner mittelgro\u00dfen bis roten Spargelstangen ist der Spargel Violetto d&#8217;Albenga <strong>eine einzigartige Sorte.<\/strong><br \/>\nDenken Sie daran, dass seine besondere Farbe nicht von der Anbautechnik abh\u00e4ngt, sondern mit seinem genetischen Erbe verbunden ist.<br \/>\nAu\u00dferdem wird seine Reinheit durch einen wissenschaftlichen Grund garantiert: Da der <strong>Violette<\/strong><strong>Spargel<\/strong> 40 statt 20 Chromosomen wie alle anderen Spargel besitzt, <strong>kann er sich nicht<\/strong> mit anderen Sorten <strong>kreuzen<\/strong> (die Nachkommen w\u00e4ren steril) und <strong>kann<\/strong> daher <strong>nicht bastardisieren<\/strong>.<br \/>\nAgronomen aus verschiedenen L\u00e4ndern auf verschiedenen Kontinenten haben versucht, sie zu kultivieren, aber mit sehr wenig Erfolg.<br \/>\n<strong>Albenga<\/strong> und seine Piana hingegen haben dank der tiefen Sand- und Lehmschicht und des Mikroklimas <strong>perfekte Bedingungen f\u00fcr den Anbau<\/strong>. Trotzdem wird dieses besondere und gesch\u00e4tzte Gem\u00fcse, das einst auf \u00fcber 300 Hektar angebaut wurde, heute leider kaum noch angebaut. <\/p>\n<h3>Albenga Violet Spargel Erntezeit<\/h3>\n<p>Die Erntezeit des violetten Spargels ist <strong>von Mitte M\u00e4rz bis Mitte Juni<\/strong>.<br \/>\nUm kommerzielle \u00dcberschneidungen mit anderen Spargelsorten, sowohl italienischen als auch importierten, zu vermeiden, haben sich die Landwirte schon immer Strategien ausgedacht, um der Ernte zuvorzukommen. Fr\u00fcher haben sie zum Beispiel den Boden mit in Wasser eingeweichten Baumwollabf\u00e4llen (Abf\u00e4lle der Baumwollspinnerei) erw\u00e4rmt. Heute gibt es jedoch modernere Methoden, wie z.B. das Verlegen von Hei\u00dfwasserrohren im Boden.  <\/p>\n<h3>Wie man Albenga Violet Spargel kocht<\/h3>\n<p>Im westlichen Ligurien steht er <strong>in einigen Restaurants<\/strong> als <strong>&#8218;Leckerbissen&#8216; auf der Speisekarte.<\/strong><\/p>\n<p>In der Gegend von Albenga gibt es sogar eine <strong>sehr feine Pizza<\/strong>, die mit violettem Spargel aus Albenga belegt ist. Da es sich um ein Gem\u00fcse mit besonders delikaten Geschmackseigenschaften handelt, eignen sich f\u00fcr diesen<strong>weichen, buttrigen und \u00fcberhaupt nicht faserigen<\/strong> Spargel am besten Zubereitungen, die seine Feinheit hervorheben.
