Diese uralte Knoblauchsorte wird in Vessalico, im Hinterland von Albenga, angebaut und hat dank des Willens einiger weniger Landwirte \u00fcberlebt. Entdecken Sie mit Pesto Fresco ein weiteres tugendhaftes Produkt aus unserem geliebten Ligurien!<\/h2>\n<p>Unser <strong>Pesto Fresco alla Genovese<\/strong> wird ebenfalls mit <strong>Vessalico-Knoblauch<\/strong> hergestellt, der <strong>aus biologischem Anbau stammt und von Slow Food gef\u00f6rdert wird.<\/strong> Diese alte Knoblauchsorte wird in Vessalico<span style=\"color: #333333; font-style: normal; font-weight: 300;\">(Imperia<\/span><span style=\"font-weight: 300;\">), einer sehr kleinen Gemeinde im oberen <\/span><strong>Arroscia-Tal<\/strong><span style=\"font-weight: 300;\">,<\/span>angebaut.Der Vessalico-Knoblauch hat dank des Willens einiger weniger Bauern \u00fcberlebt, die ihn seit Generationen anbauen und die Zwiebeln, die Anbautechnik und die Verpackungstechnik weitergeben.  <\/p>\n<h3>Vessalico-Knoblauch: Merkmale und Traditionen<\/h3>\n<p>Vessalico-Knoblauch wird nach dem 20. Juni geerntet und kann nach dem Trocknen <strong>lange Zeit<\/strong> an einem k\u00fchlen, trockenen Ort <strong>gelagert<\/strong> werden, nicht im Dunkeln oder im direkten Sonnenlicht.<\/p>\n<p>Der Tradition nach wird der Knoblauch <strong>von Hand aus 13 ganzen Pflanzen geflochten<\/strong> (in der Antike waren es 25 Pflanzen, die sp\u00e4ter aus kommerziellen Gr\u00fcnden auf 13 reduziert wurden). Die Knoblauchk\u00f6pfe, die daher weder von der Pflanze abgeschnitten noch im B\u00fcschel gesch\u00e4lt werden, bewahren ihre organoleptischen Eigenschaften. Au\u00dferdem ist der Vessalico-Knoblauch dank des Saftes, der in den Bl\u00e4ttern verbleibt und den Knoblauch selbst weiter n\u00e4hrt,<strong>haltbarer<\/strong> und <strong>\u00e4sthetisch ansprechender<\/strong>. <\/p>\n<p>D <strong>er Anbau erfolgt von Hand und biologisch<\/strong>, und jedes Jahr am <strong>2. Juli<\/strong> treffen sich die Erzeuger und veranstalten die <strong>Knoblauchmesse des 18. Jahrhunderts<\/strong>, eine ideale Gelegenheit, ihn zu kaufen. Er hat ein<strong>delikates Aroma<\/strong>, einen <strong>intensiven<\/strong> und leicht w\u00fcrzigen <strong>Geschmack<\/strong> und vor allem eine extreme Haltbarkeit. Das Klima, der besondere Boden des Arroscia-Tals und der sehr kleine Kern machen ihn zu einem Produkt von<em><strong>hohe Verdaulichkeit<\/strong><\/em>was bei gew\u00f6hnlichem Knoblauch sehr selten ist.<\/p>\n<h3>Vessalico Knoblauch: das Gebiet und das Pr\u00e4sidium<\/h3>\n<p>Vessalico ist ein kleines Dorf im Zentrum des Arroscia-Tals, einer nat\u00fcrlichen Route f\u00fcr den Warentransport zwischen Ligurien und Piemont. Es war daher der ideale Ort, um die <strong>Knoblauchmesse<\/strong> ins Leben zu rufen, eine Veranstaltung, die auf das Jahr 1760 zur\u00fcckgeht. <\/p>\n<p>Das Pr\u00e4sidium vereint eine kleine Gruppe von Erzeugern, die die Zwiebeln dieser besonderen Knoblauchsorte weitergeben und dabei die Anbau- und Verpackungsmethoden beibehalten. Diese Erzeuger sind in der<strong>Genossenschaft &#8222;A Resta&#8220;<\/strong> mit einem Markenzeichen vereint, das <strong>den authentischen Vessalico-Knoblauch kennzeichnet und aufwertet<\/strong>.
