{"id":7323,"date":"2019-05-24T16:34:00","date_gmt":"2019-05-24T14:34:00","guid":{"rendered":"https:\/\/pestofresco.eu\/vessalico-garlic-slow-food-presidium\/"},"modified":"2019-05-24T16:34:00","modified_gmt":"2019-05-24T14:34:00","slug":"vessalico-garlic-slow-food-presidium","status":"publish","type":"post","link":"https:\/\/pestofresco.eu\/en\/vessalico-garlic-slow-food-presidium\/","title":{"rendered":"Vessalico Garlic, Slow Food Presidium"},"content":{"rendered":"<h2>Vessalico garlic, the basic ingredient of Pesto Genovese, is organic and a Slow Food Presidium.<br \/>\nThis ancient type of garlic is grown in Vessalico, inland from Albenga, and has survived thanks to the will of a few farmers.<br \/>\nDiscover with Pesto Fresco another virtuous product of our beloved Liguria!<\/h2>\n<p>Our <strong>Pesto Fresco alla Genovese<\/strong> is also made with <strong>Vessalico garlic<\/strong>, which is <strong>organic and a Slow Food Presidium.<\/strong><br \/>\nThis ancient type of garlic is produced in Vessalico <span style=\"color: #333333; font-style: normal; font-weight: 300;\">(Imperia)<\/span><span style=\"font-weight: 300;\">, a very small town in the upper <\/span><strong>Arroscia Valley<\/strong><span style=\"font-weight: 300;\">.<br \/>\n<\/span>Vessalico garlic has survived thanks to the will of a few farmers who have continued to cultivate it for generations, handing down the bulbs, the cultivation technique and the packaging technique.  <\/p>\n<h3>Vessalico garlic: characteristics and traditions<\/h3>\n<p>Vessalico garlic is harvested after the twentieth of June and, after drying, can be <strong>stored for a long time<\/strong> in a cool, dry place, not in the dark or in direct sunlight.<\/p>\n<p>Tradition has it that the garlic is <strong>braided by hand from 13 whole plants<\/strong> (in ancient times, 25 plants were involved, later reduced to 13 for commercial reasons).<br \/>\nThe garlic heads, which are therefore not severed from the plant, nor hulled in the tuft, retain the organoleptic properties. Vessalico garlic is also found to be of <strong>longer shelf life<\/strong>, due to the sap that persists in the leaves and continues to nourish the garlic itself, and <strong>aesthetically beautiful<\/strong>. <\/p>\n<p>It <strong>is grown by hand and organically<\/strong>, and every year on <strong>July 2<\/strong> the producers gather and the <strong>18th-century Garlic Fair<\/strong> is held, an ideal opportunity to buy it.<br \/>\nIt has a <strong>delicate aroma<\/strong>, an <strong>intense<\/strong> and slightly spicy <strong>flavor<\/strong> and, above all, an extreme shelf life.<br \/>\nThe climate, the particular soil of the Arroscia Valley and the very small core make it a product of <em><strong>high digestibility<\/strong><\/em>, very rare in common garlic.<\/p>\n<h3>Vessalico Garlic: the Territory and the Presidium<\/h3>\n<p>Vessalico is a small village located in the center of the Arroscia Valley, a natural route for the transit of goods between Liguria and Piedmont. It was therefore the ideal place to give birth to the <strong>Garlic Fair<\/strong>, an event that dates back to 1760. <\/p>\n<p>The Presidium brings together a small group of producers who hand down the bulbs of this particular type of garlic, while preserving its cultivation and packaging methods.<br \/>\nThese producers are united in the <strong>&#8220;A Resta&#8221; cooperative<\/strong> with a trademark that <strong>distinguishes and enhances the authentic Vessalico garlic<\/strong>.<br \/>\nThe Presidium, in concert with the cooperative, is engaged in the<strong>activity of disseminating information<\/strong> about Vessalico Garlic in order to <strong>make its particularities known<\/strong> to those who reside outside the production area, where it is well known and appreciated.<\/p>\n<p>Also thanks to Vessalico Garlic, Pesto Genovese has an exquisitely unique flavor!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Vessalico garlic, the basic ingredient of Pesto Genovese, is organic and a Slow Food Presidium.
