Our Fresh Pesto is made strictly with D.O.P. Genovese Basil.
Do you want to know what is the difference from another type of basil?
Basil Genovese D.O.P. first of all, it is grown only in Liguria and has the EU protection of “protected designation of origin,” awarded to foods with characteristics quality due to the peculiarities of a specific territory.
Basil Basil Genovese D.O.P. is a typical product doubly guaranteed by a production specification monitored by the external control body and the Consortium for the Protection of Basil Genovese D.O.P.. It guarantees the highest quality in production techniques, involving traditional cultivation and packaging for retail sale only with whole seedlings complete with roots.
Basil Genovese D.O.P. is grown throughout the year: from May to October in the open field and in the greenhouse during the other months. In the greenhouse, continuous ventilation is provided and natural farm soil is used. Basil Genovese D.O.P. is then packaged in bunches, including roots, while the product intended for processing, as in our case, is cut with a maximum length of four pairs of leaves.
Basil is one of the typical products that best represent Liguria, where the sunny climate and the location between the sea and the mountains has favored the production of varieties with a light color, intense aroma and a very pleasant flavor, in the absolute absence of a hint of mint.
The most classic use of Basilico Genovese D.O.P. is in the preparation of pesto alla Genovese, but it is also successfully used in more creative preparations, such as ice cream, granita, some drinks and liqueur, and many others. All super good!
