Here is chef Gian Luca Cellerino‘s recipe.
Crispy Christmas Sunflower with Fresh Pesto: ingredients for 4-6 people
- 1 170gr. jar of Fresh Pesto
- 2 rolls of ready-made round puff pastry
- 1 bloomy rind cheese
- 1 yolk
- Organic mixed seeds (hulled sunflower, shelled pumpkin, flax)
Crispy Christmas Sunflower with Fresh Pesto: preparation
- Unroll the puff pastry (previously left at room temperature for 15 minutes) onto a round-shaped baking sheet
- Spread Fresh Pesto with a spoon over the entire surface
- Place the bloomy rind cheese in the center
- Cover with the second sheet of pastry (spread it out slightly with a rolling pin before rolling it out) and adhere the edges well with the tines of a fork
- Starting from the center, make 16 vertical cuts in the dough (as if they were the petals of a flower) and roll 2 times each triangle that will have been created
- Brush with egg yolk and sprinkle with mixed seeds (we used an organic mix with sunflower, pumpkin, flax)
- Bake at 180°C for 15 minutes or until golden brown.
Our Crispy Christmas Sunflower, made special by the addition of Pesto Fresco Genovese from Laboratorio Artigianale Frasca e Nassa in Loano, is ready. Enjoy!
