In this new tip from chef Gian Luca Cellerino of Ristocaffè Il Ponte di Toirano, an easy and impressive recipe: Moscardini in Salad with Pesto Fresco Genovese.
Moscardini are the cousins of the octopus and are just as tasty and versatile. They look similar to the octopus in fact, but smaller. They are caught year-round, especially between March and April, when they push ashore to spawn.

Octopus Salad with Fresh Pesto: ingredients for 4 people

  • 1 jar of Pesto Fresco Genovese from Laboratorio Artigianale Frasca e Nassa in Loano (Savona, Italy)
  • 1.2 kg of baby octopus
  • 800 g potatoes
  • Aromatic bouquet with rosemary, bay leaf and thyme
  • Garlic, a few cloves
  • Evo Oil
  • Juice of half a lemon
  • Salt and pepper to taste

Octopus Salad with Fresh Pesto: preparation

  • Boil the potatoes with their skins on in lightly salted water. When they are cooked through, remove them from the heat and water and proceed to remove the skins. Cut into cubes
  • Peel and wash a sprig of rosemary, thyme and bay leaves. Tie them with kitchen twine to make an aromatic bouquet
  • After removing the tooth and eyes from the baby octopuses, rinse them and put them in a pressure cooker with water, the bouquet of herbs, a dash of vinegar and a few cloves of garlic
  • About 40 minutes after the whistle blows, turn off the heat and open the pressure cooker
  • Remove dormice from water, drain, cool and remove excess skin
  • Place the baby octopus in a boule along with the potato cubes.
  • Season with a citronette, made up of EVO oil, lemon, salt and pepper, and drops of Pesto Fresco Genovese from Laboratorio Artigianale Frasca e Nassa in Loano, Savona, Italy.
