Fusion chicken breast with Fresh Pesto: ingredients for 4 people
- One whole chicken breast 650gr approx.
- 1 170-gr. jar of Fresh Pesto from Laboratorio Artigianale Frasca e Nassa in Loano, Italy
For the “dry rub”
- 3 teaspoons of strong paprika
- 1 teaspoon ground black pepper
- 3 teaspoons oregano
- 2 of freeze-dried garlic
- 2 of freeze-dried onion.
For marinating
- 1 tablespoon of lemon juice
- 1 tablespoon EVO oil
- 2 tablespoons soy sauce.
Finish
- 1 leek
- 1 fresh spring onion
- 1 jar of pesto
- Olive oil qb
Fusion chicken breast with Fresh Pesto: procedure
- Prepare the “dry rub” by mixing the ingredients indicated
- Cut the chicken breast into long strips and pass it through the “dry rub” so that all the powder sticks well
- Prepare the marinade by mixing the ingredients indicated
- Marinate the chicken in the liquids in the refrigerator, covered with foil for at least 2 hours
- Make a cold sauce with pesto and water and leave in a small bowl on the side
- Cut the leek into thin rounds
- In a frying pan, heat 2 tablespoons of EVO oil.
- Put marinated chicken and leek in pan and cook on high heat for about 15 minutes
- Plate by finishing with wire-cut spring onion and drops of Pesto Fresco sauce.
