Dear friends of Pesto Fresco, also today we want to tell you about our land, our beloved Liguria.

This week we are not telling you about pesto, although the temptation is strong, however we would like to stay on the theme of Ligurian herbs: rosemary.

You know that in Liguria we use herbs a lot, and they are part of our oldest tradition, when poor people gathered wild ones and put them in soups and all preparations to give flavor instead of the expensive spices that came from the East.

The Albenganese area (in the province of Savona) is fertile ground for all kinds of crops, especially aromatic herbs, and because of its location, these herbs have a hint of sea and mountain together that makes them unmistakable.

Rosemary is among the most beloved aromatic herbs. It is rich in therapeutic virtues, excellent in cooking and beautiful in the garden, especially in the “prostrate” version.

It is an irreplaceable aromatic in cooking, especially in the preparation of baked, grilled and pan-fried meats and fish. Also excellent in the preparation of sauces.

According to a study conducted by Kasas State University, rosemary contains substances that can reduce the carcinogenic effects that develop with barbecue cooking.

We can use the fresh leaves or even sprigs of rosemary, and we can also find it dried in the market.

Salt with rosemary is great: you dry it, powder it, and then put it in a small jar with iodized fine salt. It is great for flavoring meats, soups, and salads.

Rosemary is a beautiful and fragrant aromatic plant that can also be grown in the garden or in pots on the terrace. Being very hardy in nature, it does not need special care, just water and a little organic fertilizer.

Its needle-like leaves have an intense, pungent, resinous fragrance and are also widely used in therapeutic and medicinal fields because of the high concentration of active ingredients in its essential oil.

It is indicated for the treatment of numerous diseases, including as a general tonic, with stimulating and fortifying effects on the body.
